Pannukkau {Finnish Pancake}

My hubby's mom is Finnish.  Her parents literally came over to America on a boat from Finland.  When I met my hubby's parents for the first time, they made Pannukakku for breakfast.  It was so fun having her teach me how to make this and it was surprisingly easy.  One of my favorite memories with them was the weekend I spent meeting them in Chicago.  I was seriously amazed at how delicious this pancake was.  It is hard to describe a finnish pancake.  Basically if a crepe, a custard, a pancake and french toast had a baby, this would be it!  Doesn't that just sound amazing??  All of your favorite things rolled up into one!

My hubby's mom would make him these pancakes every year on his birthday.  So guess who just had a birthday?  The hubs.  But this birthday was a little more special than the rest.  He turned 30!!  I had to make him pannukakku of course and then completely surprised him with a getaway to a resort, snow tubing, a nixon watch, and the best tickets that I could buy to the Avalance vs Blackhawks game in Denver!  Woot woot!  I am a great wife like that.  We had such a fun day together.  I am so glad that after a year of asking his mom for the recipe to this that I finally got my hands on it!  This is one delicious pancake!

Review:  These are so excellent and easy.  You probably have all of the ingredients on hand and ready to make.  You can serve them up with fresh fruit on top, whip cream, syrup, or even some jam.  I also served it with peppered bacon and found a new and delicious technique to make them in the oven.  I will never make bacon on the stove again!  This is a favorite family recipe that we will be making again and again!

Ingredients:
4 eggs
3/4 teaspoon salt
2 1/2 cups milk
1 cup flour
1/4 cup sugar
4 Tablespoons butter

1. Preheat the oven to 400.  Place the butter in a 9x13 and put into the oven to melt and become slightly bubbly.
2. Whisk together (I do this in my kitchenaid) the 4 eggs until combined.
3. Add the flour, milk, salt, and sugar.  Blend together until batter is thin.
4. Pull the pan out of the oven with the melted butter that is slightly bubbly.
5.  Gently and slowly, pour the batter on top of the melted butter.
6.  Cook for 30 minutes.  When it is done, it will be golden brown around the edges and bubble up especially over the sides.


Peppered Bacon
Ingredients:
Bacon (I used the yummy thick stuff)
ground black pepper
brown sugar

1. Preheat the oven to 400 degrees.
2.  Line a baking sheet with aluminum foil.
3. Place the bacon laying side by side on top of the aluminum foil.
4.  Bake about 15-20 minutes or until desired crispness.
5. Once done, transfer to paper towels so that the excess grease can drain.

Look at how much fun I had reminding my cute hubby that he is 30!  I did buy him over the hill decorations.  Except now I think over the hill is at least 60 these days!

Overnight Blueberry French Toast

This was such a great weekend for us!  We had our really good friends come in town for a visit.  Whenever they come in to town, I know that it is going to be a weekend full of really late nights, movies, {we saw Les Mis and it was incredible} girl talk while the guys play some Call of Duty, and good times!  This is why I LOVE overnight breakfasts!  If you have not experienced an overnight breakfast casserole, this is the one to try!  I was able to throw it together before we went to bed, and pull it out in the morning and have a delicious breakfast ready for all of us!  I sure do love my peaches and cream french toast but I think this one became my favorite!  It is heavenly with the blueberry topping and the bits of cream cheese throughout.  Serve it up with some real whipped cream and you are sure to have a crowd pleaser!

Review: I kept the recipe the same.  I did use canned blueberries in the topping and it worked out great!  We will definitely be making this again!  I got this recipe from my girl over at High Heels and Grills.

Ingredients:
12 slices day old Texas Toast, cut into 1 inch cubes (or a loaf of french bread, when I lived in NC they didn't have Texas toast!)
2 cubes of 8 oz cream cheese, cut into 1 inch cubes
1 cup blueberries (I used 1/2 fresh and 1/2 canned)
2 cups milk
12 eggs beaten
1 tsp vanilla extract
1/3 cup maple syrup

Topping:
1 cup white sugar
2 Tbsp cornstarch
1 cup water
1 cup blueberries (I used canned)
1 Tbsp salted butter

1. Grease a 9x13 inch baking dish and place half of the bread cubes in the bottom.
2. Place cream cheese cubes and spread 1 cup blueberries with the remaining bread cubes on top.
3.  In large bowl mix the eggs, milk, vanilla and syrup.  Pour evenly over the top of the bread mixture.  Cover and refrigerate overnight.
4. Remove from the refrigerator about 30 minutes before baking.  Preheat the oven to 350 degrees.
5.  Cover the mixture with aluminum foil and bake for 30 minutes.  Remove foil from the top and cook for another 25-30 minutes until center is firm.
6. For topping, in medium saucepan mix the cornstarch, sugar, and water and bring to a boil.  Cook mixture for 3 minutes, stirring constantly.
7.  Mix in remaining cup of blueberries.  If you use canned blueberries just let it simmer for a few minutes.  If you use fresh blueberries simmer for about 10 minutes until they burst.
8.  Stir in the butter and pour over the french toast.  Enjoy!!

Overnight Cinnamon Apple Oatmeal

I have made this twice this week and I had it for breakfast and lunch today!  Yeah, this is good.  My favorite part about the recipe was to be able to dump it in the night before and quickly serve it as we are running out the door.  It is also nice because my hubby leaves pretty early, so he is able to grab some before he leaves!   This is so yummy!

Things that I changed:  Make sure that you buy steal cut oats.  Nobody at the store knew the difference so just recommended to me the old fashioned oats.  It will turn our mushy if you don't use the steal cut oats.

Ingredients:
1 Cup Steal Cut Oats
4 Cups Liquid (I split between almond milk and water.)
2 Tsp Cinnamon
1 Apple (Chopped)
1/4 cup raisins (Optional)
Stevia or Sugar to taste

1. Put Apple, cinnamon, & Raisins in the slow cooker.  
2. Then add one cup of steal oats.
3. Pour the 4 cups of liquid into the slow cooker.
4. Cover and set to low to cook for 7 hours.

Pancake Squares

I love pancakes but really stink at making them!  I either burn the outside, they are too thick, or they just look plain funny!  I envy perfect pancake makers.  I never make them but I love them.  I found this recipe and I instantly fell in love.  I was in search of a breakfast for the picky 5 year old's birthday.  The best part is that I had all of the ingredients and they were almost too easy!!  Did they pass the birthday boy's test?  He ate 2 big squares and couldn't get enough!!  You should make these right now!  It gave me hope that I can have a decent breakfast before school.  My 9 year old asked me if I would make them every morning.... now that's pushing it! :)

Things that I changed:  My first batch I cooked them longer for about 20 minutes.  The second I cooked for about 17 and they were still a little moist and perfect!

Will I make these again?  I will try my best to be a good mom and make them once a week!
Recipe From: Big Red Kitchen

Ingredients:
3/4 cup milk
2 T. melted butter
1 Large egg
1 T. sugar
1 cup flour
2 t. baking powder
1/4 t salt

1. Preheat oven to 350.  Lightly grease a 8x8 Baking dish.  

2. In a large mixing bowl, beat together milk, butter, and egg.  Add sugar, then gradually beat in the flour.  Carefully stir in the baking powder and salt.

3. Pour batter into prepared pan.  Bake for 20-25 minutes.  Serves 4-6
