Mini Orange Monkey Rolls


I love orange rolls.  I think I almost prefer orange rolls over cinnamon rolls.  There is just something about the sweet glaze with a hint of orange in it that I love.  These cute little things turned out fantastic!  I loved being able to pull apart the little pieces and they were oh so gooey and delicious!

Mini Orange Monkey Rolls

  • 12 frozen dinner rolls
  • 1 cup sugar
  • zest of one orange
  • 1/2 cup butter
  • 1/2 tsp karo syrup
Sweet orange Glaze:
  • 1 cup powdered sugar
  • zest of one orange
  • 1 tbsp butter
  • 2 tbsp orange juice
  • 1 tsp vanilla
1.  Take out 12 frozen dinner rolls and allow them to thaw but still be cold.  Cut each roll with a pizza cutter into about 4-6 smaller pieces each.
2.  Mix the 1 cup of sugar and orange zest into a small bowl and set aside.
3.  Melt the 1/2 cup butter and mix with karo syrup.
4.  Spray a muffin pan with cooking spray and set aside.
5.  Dip each small piece of the butter and roll in the sugar/orange zest mixture.  Put about 4-6 pieces into the muffin tin and fill them about 1/2 way with the small frozen dinner roll pieces.  Let them double in size.
6.  Bake at 350 degrees for 15 minutes or until golden brown.  
7.  For the sweet orange glaze, mix the powdered sugar, orange zest, 1 tbsp butter, 2 tbsp orange juice, and 1 tsp vanilla together.  Drizzle over each of the orange rolls.

Samoas Bars


Samoas are one of my favorite girl scout cookies.  I have been wanting to try these for a while now.  I loved how they turned out!  And do you know what I think?  I think these are better than the real thing!  Now I can get my girl scout samoas fix year round. :)

Review:  To save on some time you can always skip the dipping the bottom of the cookie part in the chocolate, and just drizzle the chocolate on top.  Either way these will taste amazing!

Samoas Bars

  • 1/2 cup sugar
  • 3/4 cup butter, softened
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1/4 tsp salt
  • 3 cups shredded coconut
  • 12 oz chewy caramels
  • 1/4 tsp salt
  • 3 Tablespoons milk
  • 20 oz chocolate chips
1.  Preheat oven to 350 degrees.  To make the cookie base, cream together the butter and sugar.  Next add the eggs and vanilla.  Then add the flour and salt until combined.  It will be crumbly and that is ok!  
2.  For easier removal, line a 9x13 pan with parchment paper.  Press the cookie dough base in the bottom.  Bake for 20-25 minutes and allow to cool.
3.  Toast the coconut by laying on a baking sheet and cooking turning occasionally for 10-15 minutes until the tops are slightly golden.  Remove from oven and set aside.
4.  Unwrap your caramels (or use the baking caramel bits like I did) and put into a microwave safe dish.  Add the milk and salt.  Microwave until melted stirring every 30 seconds.  Once melted, add the toasted coconut and spread over the cookie base.  Allow to cool completely.
5.  Remove the bars from the pan and cut into desired shape.  Melt the chocolate in the microwave (stirring every 30 seconds)  and dip the bottom of each square in the chocolate.  Or you can spread the bottom with a spoon if too crumbly.  Lay them on fresh parchment paper.  
6.  Put the remaining chocolate in a zip lock bag and snip the corner.  Pipe lines of chocolate on each square.  Refrigerate until chocolate hardens and serve!

Crispy Chicken with Creamy Italian Sauce


Do you ever feel proud after you make a meal?  I felt proud after I made this!  Everything about it turned out incredible!  And I was able to create the cream sauce and it turned out perfect.  Usually when I make a sauce, it is a little runny and I have to thicken it up.  But this was the perfect consistency and all of the flavors in it were amazing.   I served it with a side of fresh asparagus and it was perfection.  This turned out to be such a great meal and I was even able to get my picky eater to eat 3 bites!  That is huge progress! :)

Crispy Chicken with Creamy Italian Sauce

  • 3 Large Chicken Breasts
  • 4 cups corn flakes
  • 3/4 cup flour
  • 1 tsp salt
  • 1/2 cup milk
  • 6 T olive oil
  • 1 12 oz package bowtie pasta noodles
Creamy Italian Sauce
  • 1 8 oz container Chive and Onion Cream Cheese
  • 1 package dry Italian Seasoning mix
  • 2 cans cream of chicken soup
  • 1 c chicken broth
  • 1/2 cup Heavy Cream
1.  In a food processor grind the cornflakes into crumbs.  You can also place the cornflakes in a gallon sized bag and use a rolling pin to crush them.  Place them in a pan (I used a loaf pan) and set aside.
2.  Mix the flour and the salt together and place in a separate pan.   Then lastly put the milk into another separate pan and set them aside.
3.  Pound the chicken to flatten them to about 1/2 inch thickness.  Then cut the chicken in half, creating 6 smaller flattened pieces of chicken.
4.  Dip the chicken in the flour and coat well.  Place them on a plate and place the floured chicken in the freezer for about 5 minutes.
5.  While the chicken are in the freezer, in a large saucepan, heat up the 6 T of oil in the saucepan over medium high heat.  
6.  Take the chicken out of the freezer, drudge them in the milk and then coat them in the crushed corn flakes.  Carefully put them into the sauce pan and cook them until each side is golden brown being careful not to burn the sides.  It took mine about 5 minutes on each side.
7.  Cover the pan and reduce the heat to medium and cook for about 10 more minutes making sure they are cooked through and no longer heat.  Remove the chicken from the pan and cover with foil while you prepare your sauce.
8.  In the same saucepan, whisk together the chicken broth, cream cheese, cream of chicken soup, italian seasoning package, and heavy cream.  This should only take a few minutes to heat through so that it is warm and bubbly.
9.  Serve the sauce over bowtie pasta and cut the chicken into strips and serve them over the top!  Garnish with fresh parsley if desired.

Strawberry Pie Sour Cream Crumb Bars


Some desserts I make on my blog that I hope everyone will try... this is one of them!  I love my cherry pie bars but these were fantastic.  They were baked to perfection and I loved the strawberry pie filling swirled throughout in the sour cream.   They were so easy to make and that first bite was so creamy and delicious that it gave me hope that spring... and summer is coming!

Review:  You can use any pie filling that you would like in these!  They would be yummy with cherry or even blueberry!  These are easy to make and I know you will love them just like we did!

Strawberry Pie Sour Cream Crumb Bars

Crust:
  • 1/2 c butter, melted and cooled to room temperature
  • 1/2 c light brown sugar
  • 1 1/2 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Filling:
  • 1 c strawberry pie filling (or any kind you would like)
  • 1/2 c sour cream
  • 1/4 cup granulated sugar
  • 1 Tbsp all purpose flour
  • 1 egg
  • 1/2 tsp vanilla extract
1.  Preheat oven to 375 and prepare an 8x8 square pan by lining with parchment paper and spraying with cooking spray.
2.  Make the crust by whisking together in a medium bowl the flour, brown sugar, baking soda, baking powder and salt.  Add the melted butter.  The dough will be crumbly but make sure all of the butter is incorporated.
3.  Reserve 3/4 cup of the crust and press the remaining into the bottom of your 8x8 prepared baking pan.
4.  For the sour cream filling, mix together in a large bowl the sour cream, sugar, 1 Tbsp flour, egg, and vanilla.  Pour over the crust in your 8x8 pan.
5.  Spoon your pie filling over the sour cream and gently swirl with the sour cream filling with a spoon.
6.  Sprinkle your reserved 3/4 cup crust over the top and bake for 25-28 minutes or until golden brown.  Cool completely and serve into squares.  Store in the refrigerator up to 3 days. :)

Stuffed Cream Cheese Chicken


My hubby sent me a message with a picture of this chicken and said make this!  And it only had the listed ingredients.  Of course he would send me something to try that was wrapped in bacon.  This was delicious.  And you can't go wrong with chicken stuffed with cream cheese and wrapped in bacon.  Everything is better wrapped in bacon right? :)  The family loved it but I did feel like the cream cheese needed a little more to it.  I think the next time that I make this I am going to add an italian seasoning packet or something...  what do you think that I should add?  It just needed something else and I can't quite think of it.  I am going to have to do some experimenting the next time that I make this!

Review:  This was amazing but I am going to try to add something else to the cream cheese mixture the next time I make it.

Stuffed Cream Cheese Chicken

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese
  • 1/4 cup green onions, chopped
  • 4 slices bacon, partially cooked
1.  Partially cook your strips of bacon, about 5 minutes on each side and set aside.
2.  Wash the chicken breasts.  I cut my chicken in half making them more like tenders.  Flatten the chicken by pounding them out to be about 1/4 inch thick.  
3.  Mix cream cheese and green onion together and spread 2 tablespoons of the cream cheese mixture onto each of the flattened chicken breasts.
4.  Roll up the chicken pieces and wrap them with the strip of bacon.  Secure with a toothpick.
5.  Place the chicken on a baking sheet and bake at 375 for 30 minutes.  Broil the top the last 5 minutes to crisp the bacon.

S'mores Dip


I love anything that has sweetened condensed milk in it.  I lick the spoon every time.  Is that weird?  Maybe this is my fat inner child talking right now.  ;) I knew this dip was going to be good but I wasn't expecting it to be so good that me and my boys couldn't stop eating it.  S'mores totally remind me of camping and make me think back to all of the fun camping outings that I have had with my family.  I love this dip because you can get that same amazing s'more taste with marshmallow swirled throughout without having to roast a marshmallow.  It was amazing!  It tasted like the inside of a s'more without all of the hard work!

Review:   This was a quick and easy recipe to put together and we absolutely loved it.  Even the picky one so I am convinced that everyone will love it! ;)

S'mores Dip
  • 1 14 ounce can sweetened condensed milk
  • 1 1/2 cup chocolate chips
  • 1/2 cup marshmallow cream
  • graham crackers for serving
1.  In a microwave safe bowl, melt the sweet and condensed milk and chocolate chips together stirring every 30 seconds.
2.  Once melted, add the 1/2 cup marshmallow cream by spoonfuls and put in the microwave for another 20 seconds until the marshmallow is softened and swirl the marshmallow cream throughout creating a marbled look.
3.  Serve immediately with graham crackers and enjoy!
